Spicy sausage gold line without preservatives

 

Pure pork salami (bred and slaughtered on the farm) of medium grain, seasoned in pork gut tied by hand with natural twine. The natural product is presented in its typical "U" or horseshoe shape.

A slow and careful maturing with AW<0.88 and pH < 5.2 safeguards its healthiness.

- Average length 25/28 cm., diameter 43 mm..;

- Weight 300/500 gr.;

- Maturation time 30/35 days in relation to weight loss;

Possible moulds do not affect the product and can be eliminated with a light brushing.

Ingredients: Pork meat, salt, ground sweet pepper, exclusively from the production area of the P.G.P. of Senise-PZ, with the addition of hot chilli pepper for the hot sausage.
